Pina coladas made with vanilla ice cream are a delicious and refreshing treat. The sweetness of the pineapple is balanced by the rich creaminess of the ice cream.

ingredients
1 can (8.5 ounce size) cream of coconut
1 can (8 ounce size) crushed pineapple, drained
1/3 cup flaked coconut
1/2 cup light rum
1/2 teaspoon banana extract
2 cups vanilla ice cream, slightly softened
directions
Combine all the ingredients in a blender. Process on high speed until smooth. Pour into cocktail glasses and serve immediately.
