1/3 cup finely chopped fresh pineapple 2 1/2 ounces coconut rum such as Malibu 1/4 cup light coconut milk 1 tablespoon fresh lime juice 1 tablespoon sugar 6 ice cubes pineapple wedge, for garnish
directions
Combine the pineapple rum, coconut milk, lime juice, sugar, and ice cubes in a blender. Process on high speed until smooth and frothy.
Pour into a tall glass, garnish with a pineapple wedge, and serve immediately.
