Stuffed Sweet Potatoes With Cinnamon Topping

ingredients
8 medium sweet potatoes, scrubbed
1/2 cup butter
1/4 cup orange marmalade
1/4 cup brown sugar
4 teaspoons cinnamon sugar
1/2 cup chopped walnuts
directions
Bake sweet potatoes in a 350 degrees F oven for about 40 to 45 minutes, or until tender.
Slit the tops and scoop out the pulp, being careful not to tear the shells. Reserve shells. Place potato pulp in a bowl.
Heat together butter, marmalade and brown sugar until blended. Add to the potatoes in the bowl and beat until blended.
Divide mixture between the reserved shells, sprinkle tops with cinnamon sugar and chopped walnuts. Pat nuts lightly into filling.
Place on a cookie sheet and bake in a 350 degrees F oven for 20 to 25 minutes or until heated through.
