ingredients
3 packages (3 ounce size) peach-flavored gelatin
13 cups boiling water, divided
4 cups sugar
2 cans (46 ounce size) pineapple juice
1 large can frozen lemonade
1 1/2 cup peach Schnapps (you can use non-alcoholic)
2 quarts ginger ale, more as desired
directions
Dissolve gelatin in 9 cups of boiling water.
In another container, dissolve sugar in 4 cups of boiling water. After both mixtures are dissolved, stir together and add pineapple juice, lemonade, and peach Schnapps. Pour into 2 ice cream pails and freeze.
When ready to serve, thaw for 2-3 hours and add ginger ale to your taste.
