Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Baby Shower Punch

ingredients
1 can (46 ounce size) unsweetened pineapple juice, chilled
1 can (46 ounce size) apricot nectar, chilled
3 cans (6 ounce size) frozen lemonade, thawed and undiluted
5 cans (8 ounces) ginger ale, chilled
directions
Can use a bottle of chilled Champagne, this is not for expectant mothers though, just substitute sparkling mineral water or non-alcoholic Champagne.
Make sure all ingredients are well chilled before mixing in a punch bowl. Mix the fruit drinks first then gently add the sparkling water or Champagne. An ice ring made with extra fruit juice makes a nice addition to the punch bowl and it won't dilute the punch as it melts.

It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Am making this for a baby shower in May and plan to use big Spoonfuls of rainbow sherbet on top (after the punch is mixed) When the sherbet melts, it produces a creamy taste. Worth a try!!
I plan on making this great-sounding punch tomorrow morning, but I have a question re the directions! The directions start off talking about champagne, which is not listed in the ingredients. Nor is the substitute for champagne, sparkling mineral water, mentioned in the ingredients. But the directions go on as if one of these is a key ingredient. Is it the gingerale and/or lemonade that one might decide to scrap and substitute with champagne or sparkling mineral water? Or is this simply an extra ingredient I can add to everything else? I hope someone can answer before tomorrow morning (4/24/07) when I start putting this all together. It really does sound delicious!
Best I can tell is that you'd substitute the champagne for the gingerale if you so choose.

I made this punch for a baby shower recently and it was a huge hit. The flavor is excellent and the amount shown perfectly filled my punch bowl. Definitely use any extra juice and concentrate to make an ice ring in a bundt pan. It not only looks pretty, but, it doesn't dilute the punch. I plan to have this served at my own baby shower this weekend.
