It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

The sweet and tart flavors in this creme fraiche dip complement each other perfectly and bring out the fresh flavor of strawberries or other fresh fruit.

1 cup creme fraiche or whipped heavy cream
1/2 cup unrefined sugar
OR
1/4 cup honey or pure maple syrup
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
Combine all the ingredients in a bowl and mix well. Let the dip sit at room temperature for 15 minutes before serving for the flavors to meld.
If not serving immediately, store the dip in the refrigerator in a covered container for up to 2 days.
Serve the creme fraiche dip with fresh strawberries or other fruit for dipping.
