Delicious recipes for red velvet cakes, cupcakes, and cheesecakes.

A simple but delicious stir fry made with chicken, fresh broccoli, mushrooms, carrots, bok choy, water chestnuts, and teriyaki sauce.
2 tablespoons dark sesame oil, divided
2 cloves garlic, finely minced
2 pounds chicken breasts, skinless and boneless
1 head broccoli, stems removed, broken into florets
12 mushrooms, sliced
3 carrots, peeled and julienned
1/2 cup water chestnuts, sliced
1 head bok choy, chopped
3 tablespoons teriyaki sauce
Heat 1 tablespoon dark sesame oil in a saute pan over medium heat. Add garlic and stir.
Place the chicken in the saute pan and brown 4 minutes on each side. Remove from pan, slice into strips, and set aside.
Add remaining tablespoon of oil to your saute pan and warm over high heat. Add the vegetables and teriyaki sauce. Stir-fry quickly until the vegetables begin to soften.
Add the chicken strips, combine well, and continue to cook for 2 to 3 minutes. Serve immediately.

I thought it was pretty tasteless. I could taste the garlic, and a little teriyaki.. but I wouldn't make it again. Honestly I haven't tried to make stir fry at home for years so I'm comparing this to the stir fry I get at a restaurant. Also, I used frozen stir fry vegetables not the broccoli and other vegetables in the recipie. Perhaps that's why it wasn't tasty.
Frozen stir fry vegetables are usually rather tasteless. Try it as written with fresh vegetables.

I've enjoyed this recipe before. The dark sesame oil makes a big difference in the flavor. And I always enjoy the sporadic crunch of water chestnuts. I like my broccoli cooked, not al dente, so I simply bought one of those steam-in-the-bag packages for the microwave and added the broccoli toward the end. Also, bok choy can be a little bitter tasting. So I substituted shredded cabbage this time and was pleased with the result.

Love the recipe. These are ingredients I always have in my pantry and "fridge". Vegetables in the fridge, chicken breasts in the freezer One never knows when friends drop in.... I like to be able to say "Stay for dinner", and know I have the ingredients to whip up a delicious offering in no time flat.... I always keep a bag of frozen, cut-up "Chinese Style" stir fry vegetables in my freezer, for emergencies; along with 10 lb. bags of frozen chicken breasts..... Frozen chicken breasts have to be the most versatile main meat in one's freezer. Make Stir Fry, or Pot Pie; Thai or Indian recipes; also ideal for Italian recipes.

You've got to love stir-fries. They're hot, tasty and quick (if there's not too many ingredients). This recipe was quick and tasted great. The recipe called for a lot of broccoli. I didn't add quite that much.
