It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A simple way to get a delicious stir-fry on the table in mere minutes. You can use any variety of vegetables in the recipe.

1 1/2 pound boneless chicken (white or dark meat)
1 tablespoon cooking oil
4 cups frozen stir-fry vegetables, thawed
3/4 cup teriyaki stir-fry sauce
sesame seeds, optional
sliced green onions, optional
hot cooked rice or noodles, optional
Cut the chicken into strips.
Heat the oil in a wok or skillet over medium-high heat. Add the chicken and cook, stirring frequently, until the chicken is browned, about 5 minutes.
Add the vegetables. Cook, stirring constantly, for 3 minutes.
Stir in the teriyaki sauce. Cook until heated through. Serve hot, sprinkled with sesame seeds and green onions if desired. Serve with steamed rice or cooked noodles.
