Salmon with a wonderful smoky-sweet flavor made from a simple glaze of maple syrup, chipotle chili powder, and cumin

1/2 teaspoon chipotle chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1 tablespoon canola oil
4 (6 ounce size) salmon fillets
1 tablespoon maple syrup
Preheat the broiler.
Combine the chili powder, cumin and salt and rub the mixture evenly over the surface of the fish. Heat the oil in a cast-iron (or other ovenproof) skillet. Add the salmon and cook 3 to 4 minutes on each side, or until nearly cooked through. Remove from the heat and drizzle the maple syrup evenly over the top.
Place under the broiler for 1 minute. Remove from the oven and use a brush or butter knife to spread the hot syrup evenly over the surface of the fish.

LOVE! The combination of the smoky chipotle and sweetness of the maple syrup were absolutely wonderful! The syrup doesn't make the dish overly sweet (we're talking less than a teaspoon for 4 fillets) and it balances so well with the flavor of the salmon and spices. The fish was done perfectly as well (actually cook time may vary based on thickness of the fillets).
