Pressure Cooker Salmon Steaks

Salmon can easily become dry if overcooked. The pressure cooker keeps moisture in to ensure the fish is tasty and flaky every time.

ingredients

1/2 cup water
1/2 cup dry white wine
2 (1 3/4 lb.) salmon steaks, approximately 1 inch thick
1/4 teaspoon salt
1/8 teaspoon black pepper
1 medium onion, sliced in rings
1 lemon, sliced

directions

Place a trivet or rack in the bottom of the pressure cooker. Add the water and wine.

Season the salmon with the salt and pepper and place the fish on the rack. Top the fish with the onion slices. Reserve 4 slices of lemon for garnish and place the remaining lemon slices on top of the fish.

Close the lid on the pressure cooker. Bring to full pressure and cook for 6 minutes.

When the time is up, use the quick-release method to release the steam. Remove the onion and lemon from the fish and move the fish (carefully, it will be flaky) to a serving plate.

Discard the onion and lemon. Garnish the fish with the reserved lemon slices and serve immediately.

    Why throw away the onions? Just eat them.

    • The onions can be eaten. However, they aren't all that visually appealing after being cooked with the salmon because of the white, coagulated protein that comes out of the fish while cooking. They are perfectly safe to eat, but the appearance and texture can be a little off putting.

    That was faaaaaaaaaantastic! We had been given some Copper River salmon which is considered a total delicacy in the PNW! $20 a pound! It was a gift and we'd never had it before. The fillet was about 3/4" thick. I used straight water, and adjusted the cooking time to 4 minutes. DONE TO PERFECTION! Thank you!! My forever salmon recipe in my pressure cooker!

    Oh for Kris sake! Put the 1/8/- 1/4 inch onion slices atop the fish then dump them when you're done! It ain't rocket science!!!!

    In the ingredients it calls for sliced onions, but nowhere in the directions is there a word about when to put them in the cooker,except to discard them at the end.

    • Since the recipe as submitted omitted the directions for the onions, we just added them with the lemon slices before cooking.

    The recipe calls for "sliced" onions. Nothing about the thickness. The recipe states to throw the onions away. It does not state how or where to use them.
