Broiled Salmon with Dijon-Caper Cream Sauce

Quick way to elevate some ordinary salmon fillets. Sour cream, Dijon mustard, and capers make a creamy sauce perfect for topping broiled salmon.

ingredients

6 salmon fillets (6 ounce each)
1/2 teaspoon salt
1 teaspoon black pepper, divided
6 tablespoons Dijon mustard, divided
1 container (8 ounce size) sour cream
1 jar (3 ounce size) capers, well drained

directions

For fish: Sprinkle fish with salt and half the black pepper; brush fish with 2 tbsp. mustard. Place on a lightly greased rack in a broiler pan.

Broil 5-1/2 inches from heat (with electric oven door partially open) 7 minutes or until fish flakes easily with a fork.

For sauce: Combine remaining pepper, remaining mustard, sour cream, and capers. Serve over fish.

    Excellent dish! I cook steelhead filets often and this is now our favorite recipe. It took a bit longer to broil the fish than the recipe states, but well worth the results. I did use a dijon mustard with a bit of horseradish for a zing.

    This is my family's favorite salmon recipe because the sauce is so tasty, but the recipe makes a lot ... I make half a batch of the sauce to go with one large fillet from Costco. In warm weather, we grill the salmon, which makes it even better.
