This mouth-watering dinner is a delicious combination of earth and sea, fusing the fresh taste of salmon with the rich earthiness of mushrooms to create a simply divine dinner.

serves/makes:

ready in:
  under 30 minutes

ingredients

1 can (10.75 ounce size) condensed cream of mushroom soup
1/2 cup skim milk
1 teaspoon dried minced onion
1/4 teaspoon dried tarragon
1/4 teaspoon garlic powder
4 salmon steaks or fillets (4 to 6 ounce each)
1 bag (1 pound size) frozen chopped broccoli

directions

Cut out pieces of parchment paper (12x14-inches each - one per salmon fillet)

In a small bowl, combine the soup, milk, onion, tarragon, and garlic powder until smooth. Set aside.

Pat the salmon dry with a paper towel.

In the center of each piece of parchment paper, place 1 cup of the broccoli. Top each with one salmon fillet and drizzle about 1/2 cup of the soup mixture over the top.

Fold the parchment up over the ingredients starting with the short sides, folding the edges over several times to seal.

Place in the microwave and cook on medium power for 8-10 minutes or until the fish is opaque.

To cook in the oven, use aluminum foil or parchment. Place the packets on a baking sheet and cook at 400 degrees F for 20-25 minutes.

recipe tips

Add a squeeze of lemon juice over the salmon before sealing the packets for a hint of brightness.

Try different herbs and spices in the soup mixture for variety.

For a richer sauce, substitute half-and-half or heavy cream for the skim milk.

common recipe questions

What can I substitute for dried minced onion?

You can substitute 1 tablespoon of fresh, finely minced onion for the dried minced onion called for in the recipe.

What does tarragon taste like and can I omit it?

Tarragon has a slight anise or licorice flavor. You can omit it if you do not enjoy this flavor or substitute with another herb like thyme or dill.

Can I use fresh garlic instead of garlic powder?

You can use fresh minced garlic in place of garlic powder. Use 1 clove of garlic for the 1/4 teaspoon of garlic powder.

How do I know when the salmon is cooked through?

Salmon is cooked through when it reaches an internal temperature of 145 degrees F. It should also be opaque and flake easily with a fork.

Can I use a different fish instead of salmon?

You can use other firm-fleshed fish like cod, halibut, or trout in this recipe.

Can I add other vegetables to the bake?

Feel free to add in other vegetables like sliced bell peppers, zucchini, or cherry tomatoes.

How do I store and reheat leftovers?

Store leftovers in an airtight container for up to 2 days. To reheat, gently warm the leftovers in the microwave or oven until heated through. Be careful not to overcook to avoid drying out the salmon.

Can I freeze the salmon?

You can freeze the bake before cooking it. Simply assemble the packets, wrap tightly in plastic wrap, and freeze for up to 2-3 months. Thaw in the fridge before cooking.

tools needed

Parchment Paper: These are used to create individual packets for each salmon fillet, holding the salmon, broccoli, and creamy soup mixture together while they cook.

Microwave or Oven: The cooking method will depend on whether you prefer a quick cook in the microwave or a slower bake in the oven. Both methods result in a deliciously creamy salmon bake.

Small Bowl: For mixing the cream of mushroom soup, milk, dried minced onion, tarragon, and garlic powder together to create the sauce for the dish.

Paper Towel: Important for patting the salmon fillets dry before assembling the packets.

Microwave-Safe Plate or Baking Sheet: When using the microwave, a microwave-safe plate is needed to place the parchment paper packets on during cooking, while a baking sheet is used in the oven.

Aluminum Foil (alternative to parchment paper): If you don't have parchment paper, aluminum foil can be used to create the packets for cooking the salmon and broccoli (oven baking only, don't put foil in the microwave!).

Measuring Cups & Spoons: For accurately measuring the ingredients for the creamy mushroom soup mixture.

Spoon: To drizzle the creamy soup mixture over the salmon and broccoli in each parchment paper packet.

what goes with it?

Garlic Parmesan Mashed Potatoes: the creamy and flavorful potatoes will complement the rich sauce and add a comforting side dish to the meal.

Wild Rice Pilaf: the nuttiness of the wild rice will pair perfectly with the tender salmon, providing a hearty and satisfying side dish.

Quinoa Salad with Avocado: serve a light and refreshing quinoa salad with avocado for a textural contrast.

Caprese Salad: serve a classic caprese salad with ripe tomatoes, fresh basil, and creamy mozzarella to add a pop of color and freshness to the plate.

beverage pairings

Wine Pairings
Chardonnay: Chardonnay's buttery notes and hints of oak can complement the richness of the cream of mushroom soup while still letting the salmon shine through. Look for a lightly oaked or unoaked Chardonnay for a balanced pairing.

Pinot Grigio: If you prefer a lighter white wine, a crisp Pinot Grigio can add a refreshing touch to the dish. Its citrus and green apple notes can cut through the creaminess of the soup and enhance the salmon's flavor.

Merlot: Opting for a red wine? A fruity Merlot with soft tannins can be a surprisingly good match.

Other Alcohol Pairings
Gin and Tonic: The botanicals in gin can accentuate the herbal notes of tarragon and garlic. The effervescence of tonic water adds a refreshing contrast to the creamy mushroom soup.

Whiskey Sour: The tartness of a whiskey sour can balance the richness of the dish.

Dark and Stormy: Dark rum paired with ginger beer can add a warm and spicy kick to the creamy and savory flavors of the dish. The ginger's heat can cut through the richness, while the rum's sweetness can enhance the salmon's natural sweetness.

Non-Alcoholic Pairings
Green Tea: A green tea's gentle light and floral flavor can complement the salmon and broccoli without overwhelming the dish.

Cranberry Juice: The tartness of cranberry juice can provide a refreshing contrast to the creamy mushroom soup and add a fruity twist to each bite of salmon.
