ingredients

1 salmon fillet
4 asparagus spears, tough ends snapped off
2 tablespoons olive oil, plus more for the salmon and asparagus
salt and pepper, as desired
3 tablespoons crushed garlic
2 tablespoons sliced fennel
1/4 cup chicken stock
3 large shrimp, peeled and deveined
1 teaspoon crushed red pepper

directions

Heat a grill to medium-high heat. Grease the grill grates.

Spray or brush the salmon and asparagus with olive oil and season as desired with salt and pepper.

Place the salmon on the grill. Cook for 4-6 minutes per side, or until the salmon flakes easily with a fork. When you flip the salmon to the other side, place the asparagus spears on the grill and cook until done. They should be done about the time the salmon is. Remove the salmon and asparagus from the grill.

Meanwhile, saute the garlic in the olive oil in a saucepan over medium heat until soft and fragrant. Add the fennel and cook for 2 more minutes, stirring frequently.

Add the shrimp to the fennel mixture. Cook, stirring occasionally, until the shrimp just start to turn pink. Add the chicken stock and crushed red pepper flakes and saute for 3 minutes, or until the shrimp are cooked through.

Place the asparagus on a dinner plate. Top with the grilled salmon fillet. Spoon the shrimp and fennel mixture over the salmon and serve immediately.
