Grilled Honey Glazed Salmon with Grilled Pineapple

Salmon basted with sweet soy ginger sauce grills up right alongside pineapple slices for a plate that pleases the eye and the palate.

ingredients

1/2 cup orange juice
2 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
12 slices fresh pineapple
6 salmon fillets or steaks
salt and pepper, to taste

directions

Preheat the grill to medium-high heat and grease the grates well.

Combine the orange juice, brown sugar, mustard, honey, soy sauce, and ginger in a small bowl and mix until combined. Transfer 1/4 cup of the sauce to another container to use on the finished dish. Set both aside.

Place the pineapple slices on the grill and cook for 2 minutes per side or until soft and lightly browned. Remove from the grill and place 2 pineapple slices on each individual dinner plate.

Season the salmon with salt and pepper. Place on the grill and cook for 3 minutes. Baste with the honey-orange sauce then carefully turn the salmon over. Baste with the sauce and cook for 5 more minutes or until the salmon is cooked (it should flake easily with a fork).

Place the salmon fillets on top of the grilled pineapple slices, drizzle with the reserved sauce, and serve immediately.

    Made this for a family party, and everyone loved it. We caught salmon this weekend and decided to try a new recipe. For the first time my 5-year old said "ohhh, I like this fish! It tastes delicious!" I didn't have orange juice so I substituted a 1/4 cup pineapple juice and a 1/4 cup balsamic vinegar. Served the pineapple and salmon with brown rice. A single bite including the pineapple, rice and a piece if salmon was delicious! I devoured my plate, and so did all the guests.
