Quick and easy salmon with a cucumber sauce that has a little horseradish kick to it. Great for a healthy weeknight dinner.

Salmon
1/4 cup melted butter
1 1/2 tablespoon lemon juice
4 (3/4-inch-thick) medium salmon steaks or choice of fish
Cucumber Sauce
1/2 cup peeled, seeded cucumber, grated medium-coarse or diced small
2 tablespoons grated onion
1 1/2 tablespoon well-drained horseradish
1/2 cup light cream
1/2 teaspoon salt
pepper, to taste
Preheat oven to broil. Combine butter and lemon juice; brush generously on salmon steaks. Place on broiler rack 3 inches from heat; broil 6 minutes. Turn and brush again with butter, lemon mixture. Broil for an additional 6 minutes, or until fish is opaque throughout.
For sauce, combine cucumber, onion, horseradish, cream, salt and pepper; heat to serving temperature. Serve each steak topped with cucumber sauce.

The light cucumber sauce was delicious with the salmon. Everything was done perfectly and ready in about 15 minutes total!
