ingredients
2 cups cooked rice
1/2 cup chopped fresh cilantro
1 can (12 ounce size) Spam Classic sliced into 1/4-inch slices
1 onion cut into wedges
2 cups shredded monterey jack cheese with peppers
1/2 cup heavy cream
1 tablespoon oil
directions
In bowl, combine rice and cilantro; set aside.
In large skillet over medium-high heat, cook Spam and onion 7 to 10 minutes or until lightly browned.
Meanwhile, in 2-quart saucepan over low heat, combine cheese, cream, and oil. Cook, stirring occasionally, until cheese is melted.
Place rice in center of plate; drizzle with cheese sauce. Place Spam around rice. Serve with warm tortillas.
