If we're talking foods with bad reputations, Spam is up near the top of the list. Most people knock it before they try it, though. Give this cheesy noodle casserole a shot and you'll see Spam in a tasty new light.

1 pound elbow macaroni or egg noodles
1 can (12 ounce size) Spam
1 pound Cheddar cheese
diced onion, to taste
Mrs. Dash seasoning, to taste
salt and pepper, to taste
garlic powder, to taste
1 can (12 ounce size) evaporated milk
1 can cream of mushroom soup
Cook macaroni or egg noodles to al dente.
Meanwhile in large greased casserole or glass mixing bowl, combine all other ingredients.
Add cooked and drained macaroni. Sprinkle top with bread crumbs and grated cheese. Also dot top with butter or margarine.
Bake for 30 minutes at 350 degrees F.

Good "comfort food." Very filling, which is good considering that it isn't very low on calories. I did not add salt since the Spam is plenty salty by itself. The result was good I thought. It didn't turn into a sodium bomb for dinner.
