Savory Roasted Turkey Breast

2 cloves garlic, minced
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/8 teaspoon black pepper
3 1/2 pounds whole bone-in fresh turkey breast
directions
Heat oven to 500 degrees F. Line 13x9-inch metal baking pan with foil; spray with nonstick cooking spray.
In small bowl, combine garlic, poultry seasoning, salt and pepper; mix to form a paste. Rub mixture inside turkey breast and neck cavity and sparingly over skin. Pull skin from ribs and neck tightly to underside of turkey breast. Place turkey, breast side up, in sprayed foil-lined pan, making sure turkey is resting on skin to prevent charring of bone.
Bake at 500 degrees F. for 20 minutes or until deep golden brown. Cover loosely with 12-inch square of heavy-duty foil to prevent spatters; bake an additional 20 to 30 minutes or until turkey is no longer pink and juices run clear.
