So many turkey recipes tend to be more or less the same thing, but this one breaks the mold. Sauerkraut, ingeniously balanced with sweet apples and cranberries, turns into a fantastic condiment for the juicy turkey breast.

5 pounds turkey breast, thawed
3 tablespoons oil
salt and pepper
2 pounds sauerkraut, rinsed
1 shallot, minced
1 cup carrots, chopped
2 tart apples, chopped (Granny Smith, etc.)
2/3 cup sweetened dried cranberries
14 ounces chicken broth
Heat oven to 350 degrees F.
Rub turkey with oil and salt and pepper. Place in a medium roasting pan.
Mix sauerkraut, shallot, carrots, apples and cranberries and spread around turkey. Pour broth over top and bake uncovered for 1 hour and 45 minutes or until internal temperature reaches 170 degrees F. Baste occasionally.
Remove from oven and tent for 10 minutes.
