A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Lemon Cottage Cheese Pancakes

ingredients
6 eggs, separated
2 cups 2% cottage cheese
1/4 cup sugar
1/2 cup flour
1/4 teaspoon salt
2 lemons, zest of
2 tablespoons butter, melted
vegetable oil
confectioners' sugar
directions
Beat whites to form stiff peaks.
Meanwhile, in a separate bowl, whisk egg yolks, cottage cheese, sugar, flour, salt, lemon zest, and melted butter.
Stir one third of the whites into the yolk mixture until smooth and well combined. Fold in the remaining whites using a rubber spatula.
Heat a large non-stick skillet over medium with a thin coating of vegetable oil. Dollop a quarter cup of batter on the skillet for each pancake. Let cook until lightly browned, about 2-3 minutes per side.
Repeat until all remaining batter is used. Serve immediately with a sprinkling of powdered sugar.
