ingredients
2 cups flour
2 tablespoons brown sugar
1 tablespoon baking powder
1 1/4 teaspoon pumpkin pie spice
1 teaspoon salt
1/2 cup pure pumpkin puree
1 large egg
2 tablespoons vegetable oil
Pumpkin Sauce
1 cup maple syrup
1 1/4 cup pure pumpkin puree
1/4 teaspoon cinnamon
directions
Combine flour, brown sugar, baking powder, spice and salt in large bowl. Combine milk, pumpkin, egg and vegetable oil in small bowl. Add flour mixture. Stir just until moistened. Batter may be lumpy. Cook as normal for pancakes.
For sauce, heat maple syrup, pumpkin, and cinnamon in small saucepan until warm.

My kids loved these pancakes. I was looking for a way to use leftover pumpkin puree and this is a great way. We will definitely make these again.

These pancakes were great. The kids loved them. They were fluffy and great the next day. I am keeping the recipe! It is a must try!
This recipe looks yummy and I'm in the process of making it now. However, the instructions call for milk but the ingredient list doesn't list the amount of milk needed. I'll play with the amount and see how it turns out. Sure it will be delicious!

These pancakes were very good and quite filling. The recipe, as written, is very dry, so I had to add milk until I good get it to the consistency of pancake batter. I probably added at least a cup of milk. I also added some chopped glazed pecans to the batter. The pumpkin sauce was also very good; a nice touch instead of using just maple syrup.
