ingredients
1 loaf French bread
1 tablespoon mayonnaise
lettuce leaves, rinsed and crisped
1 medium red onion, thinly sliced
1 small cucumber, peeled and thinly sliced
3 tablespoons red wine or balsamic vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
8 ounces sliced Swiss or Jarlsberg cheese
8 ounces thinly sliced baked ham
1/2 cup peeled roasted red and yellow peppers, drained
directions
Cut bread in half lengthwise and place cut sides up. Spread bottom half with mayonnaise, then add a layer of lettuce. Add layers of tomato, onion, and cucumber.
In a small bowl, combine vinegar, olive oil, and mustard, mixing well.
Drizzle a third of the vinaigrette over vegetables. Then add a layer each of cheese and ham. Drizzle with another third of the vinaigrette, then top with roasted peppers.
Drizzle remaining vinaigrette on cut side of top of loaf. Gently press top half over filling.
Slice into serving pieces.
