ingredients
nonfat cooking spray
2 teaspoons corn oil
1 pound shrimp, peeled and deveined (or frozen, cooked shrimp that have been thawed)
1 bag (14 ounce size) frozen broccoli florets
1 can (11 ounce size) corn with red and green pepper, drained
1/2 cup coarsely chopped onion
1/4 teaspoon hot pepper (or Tabasco) sauce
1 tablespoon Cajun seasoning
1 can (14.25 ounce size) diced tomatoes
hot rice (optional)
8 lemon wedges (optional)
directions
Coat a cool, nonstick wok with cooking spray. Heat wok and add oil. Add shrimp and cook until they turn pink. (If using precooked shrimp, add shrimp during last minute of cooking.) Remove shrimp and set aside.
Place frozen broccoli in wok and cook for 3 minutes, stirring constantly. Add corn, onion, hot pepper sauce, and Cajun seasoning. Cook 2 minutes more, stirring frequently. Add tomatoes and cook until hot and bubbly, about 3 minutes.
Add cooked shrimp and heat 1 more minute, stirring frequently. Serve immediately (over hot rice with a squeeze of lemon, if desired).

Nothing fancy or gourmet in this recipe, just good ol' fashioned home cookin'. If you buy pre-cooked frozen shrimp, you can really whip this up in a hurry for a family dinner that will be satisfying, if not exciting. The rice accompaniment can help to stretch the number of servings.
