It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

- #56456
30-60 minutes
ingredients
1/3 cup finely chopped dried apricots
2 tablespoons brandy
1/4 cup all-purpose flour
3 tablespoons firmly packed dark brown sugar
1/8 teaspoon salt
3 tablespoons cold unsalted butter, cut into bits
1/3 cup old-fashioned rolled oats
2 tablespoons sliced almonds
2 golden delicious apples, peeled, quartered, cored, and sliced thin crosswise
directions
In a small bowl let the apricots soak in the brandy for 5 minutes.
In a bowl blend the flour, the brown sugar, the salt, and the butter until the mixture resembles coarse meal, add the oats and the almonds, and toss the mixture until it is combined well.
In a 9 inch (4 cup) glass pie plate, toss together the apples and the apricot and brandy mixture, sprinkle the oat mixture over the top, and bake the crisp in a preheated 400 degrees F oven for 25 minutes, or until the apples are tender and the topping is browned lightly.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
