ingredients

4 hard-boiled eggs, cooled, shelled and shredded
15 green stuffed olives, chopped into quarters
1 teaspoon sugar
salt and white pepper
4 tablespoons mayonnaise

directions

In medium sized bowl, combine everything and mix well. Cover and refrigerate at least 2 hours before using.

To Assemble Sandwich: Toast bread, put 1/4 cup egg salad on one piece of toast you have spread with mayonnaise, add 1 crisp lettuce leaf, top with second piece of toast you have spread with mayonnaise.

Variations: Top Egg Salad you've spread on toast with 1 slice of deli ham or 3 strips of crisp drained bacon, then top with lettuce leaf and second piece of toast you've spread mayonnaise on.
