ingredients
8 eggs, hard-boiled and peeled
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1 tablespoon spicy brown mustard
1 teaspoon paprika
1/2 medium yellow onion, minced
salt and black pepper, to taste
directions
Combine all ingredients except the onion, salt and pepper in a large bowl. Mash well or leave a little chunky if you wish.
Stir in onion. Taste, then season with the salt and pepper.
