4 hard-boiled eggs, peeled
1/4 pound finely shredded Swiss cheese
1/4 small onion
salt
mayonnaise
Grate the eggs on a box grater until fine. Add to a bowl along with the Swiss cheese.
Finely chop the onion in a food processor and add to the eggs. Add as much mayonnaise as needed to bind the salad. Season as desired with salt. Serve immediately, or cover and chill for 1-2 hours.

I made this recipe last year for my daughters 3 year old class..and cut the bread with cookie cutters (bunny, Chick, flower) they were a huge hit..and my husband loved this recipe so much..I had to make 3 more batches over the weekend! I think I may have added more spices for the grown ups.. but both were excellent! Making it again this week!
