Let's be honest: salads can be hit or miss. This healthy Greek salad, with its zesty dressing and crisp veggies, is definitely a delicious hit.
Dressing
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 teaspoon minced garlic
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon sugar or sugar substitute
Salad
8 cups torn romaine lettuce, or other leafy lettuce
1 medium cucumber, sliced julienne
1 green bell pepper, seeded, cored, and sliced julienne
1 yellow or red bell pepper, seeded, cored, and sliced julienne
1/2 red onion, thinly sliced
10 cherry tomatoes, halved
18 kalamata olives, pitted
1 ounce crumbled or cubed feta cheese
Combine the vinegar, oil, garlic, oregano, pepper, and sugar in a blender or food processor. Process until smooth. Transfer the dressing to a jar or measuring cup (something pourable).
Toss together the romaine lettuce, cucumber, bell peppers, onion, cherry tomatoes, kalamata olives, and feta cheese in a large serving bowl. Drizzle with the dressing, tossing gently to coat the vegetables in the mixture.
Serve the healthy Greek salad immediately.

To be honest, I probably wouldn't have made anything this "fresh" if I weren't trying to lose a little weight. But it was a good salad, and very lively and colorful in appearance as a bonus. I agree that the feta cheese in the dressing made for a texture that some people might not care for, but it made no difference to me. I doubled down on the garlic and really enjoyed what that added to the dressing, which overall tasted quite good. The recipe makes a relatively small amount of dressing. But when you're dieting, that's probably a good thing.

I wish I had read the reviews about not putting the feta in the dressing. I did and really didn't like the texture. It tasted ok but I would have preferred it separate.

Loved the blend of salad ingredients. Used my own dressing and topped with feta and added sliced red onion.

Just a note, I really don't think the feta cheese is supposed to be blended with the dressing, is it? I left it out and just sprinkled it on the salad. Would be interested to know if others add it to the dressing or not.
