1 head romaine lettuce cut into 1/2-inch strips
1 cup sliced cucumber
1 cup crumbled feta cheese
1/2 cup pitted kalamata olives
1/2 cup roasted red bell peppers, sliced
1/2 cup thinly sliced red onion
3/4 cup vinaigrette salad dressing
Combine the lettuce, cucumber, cheese, olives, roasted peppers, and onion in a large bowl. Toss gently to combine.
When ready to serve, drizzle the dressing over the salad and toss lightly. Serve immediately.

Used a combination of romaine and iceberg lettuce for a little added texture. We thought it was a really good salad and will make it again.

Simple but good. I added quartered roma tomatoes instead of the roasted peppers though.
