A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

If you don't marinate your chicken, your life is about to change. Citrus juice, Dijon, and Worcestershire combine to bring an end to bland chicken.

1/2 cup orange juice
1/4 cup lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/4 cup canola oil
3 cloves garlic, pressed or chopped
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
kosher salt, to taste
black peppercorns, freshly ground
Combine the orange juice, lemon juice, Dijon, and Worcestershire sauce in a non-reactive bowl. Whisk well and while whisking, add the oil slowly.
Stir in the garlic, parsley, oregano. Add salt and pepper as desired.
For easiest marinating, pour the mixture into a zip-top plastic bag. Add chicken pieces, seal the bag, and turn to coat the chicken in the marinade. Place the bag in the refrigerator. Marinate chicken breasts for 3-4 hours, or chicken thighs, drumsticks, leg quarters, or wings for 4-6 hours. You can marinate a whole chicken for 6 hours.
Discard the marinade after using.

If you use regular mustard instead of Dijon, take out the oregano and parsley and replace it with fresh chopped Cilantro and add zest from an orange, I think this recipe is a lot better. Even so, this recipe is very good. Definitely recommend.

This recipe is fabulous! It reminds me of Chicken Mirabella but alot easier to make.

My family was very disappointed with the chicken that had been marinating in this sauce for six hours. I grilled it and didn't burn it, but it just had a bland taste, nothing special or exciting or really even flavorful! I did not use freshly squeezed OJ or Lemon Juice if that possibly made the difference, but the other reviewers nor the recipe mention that, so maybe that wasn't the deciding factor. Just can't recommend it.

My first review, of anything, EVER. But can I just say, this is the best chicken marinade that I have ever tried. Not fancy, not difficult, just delicious. Highly recommended!
