If you like overnight oats, you're going to fall in love with this muesli. Apple juice sweetened oats, nuts, and dried fruit make a perfect base for a big spoonful of Greek yogurt. It's chewy, it's crunchy, it's healthy, it's perfect.

6 ounces rolled oats
6 ounces raisins or sultanas
4 ounces dried apricots, roughly chopped
4 ounces hazelnuts, split in half and roasted
12 ounces fresh apple juice
2 apples, peeled and coarsely grated
1 small container Greek yogurt
4 ripe apricots, roughly chopped
clear honey to serve
In a large bowl mix together the oats, raisins, apricots and hazelnuts. Pour over the apple juice and leave for 10-15 minutes to allow the oats and dried fruit to soak up the juice.
Divide the muesli between individual glass bowls and top with the grated apple. Spoon on a dollop of yogurt and drizzle over some honey. Serve immediately.
