ingredients
3/4 cup water
1/4 cup fresh squeezed orange juice
1/2 cup couscous
1 teaspoon finely grated orange zest
2 tablespoons finely chopped blanched almonds
1 tablespoon honey
1 tablespoon frozen apple juice concentrate
1 dash cinnamon
directions
Combine all of the ingredients in a 1-quart microwaveable casserole dish. Cover. Microwave on high until the liquid is absorbed and the couscous is tender, 5 to 6 minutes.
Let stand, covered, for 1 minute more.
