Cornmeal thickened up like grits can be a delicious and satisfying breakfast with a bit of butter or some jam and walnuts.

1 cup cornmeal
1 cup cold water
1 teaspoon salt
3 cups hot water
Combine the cornmeal and cold water in a bowl. Mix well and set aside.
In a medium saucepan, combine the salt and hot water over high heat. Bring to a boil.
Stir the cornmeal mixture into the boiling water and mix quickly. Bring the mixture back to a boil then reduce the heat to low. Let the cornmeal mush simmer for 10 minutes or until thickened.
For a sweeter cornmeal, stir in a little sugar (to taste). Serve with butter and shredded cheese or maple syrup.

Pro tip: Add a teaspoon of baking soda, they will cook faster and be creamier. Also works for grits!!

This is an excellent filling breakfast .... be aware it is a mush but absolutely delicious served with a dollop of organic butter and maple syrup! Gives me energy for a morning of exercise. Also a good breakfast if you are trying to lose weight.
