A breakfast-themed cookie loaded with oats, peanut butter, and dried fruit. These hearty cookies are perfect for an on-the-go breakfast or a mid-morning snack.

ingredients

6 eggs
1 cup butter
2 cups brown sugar
1 1/2 cup honey
1 tablespoon vanilla extract
1 jar (18 ounce size) peanut butter
1 cup dry milk powder
4 teaspoons baking soda
9 cups old fashioned oats
1 cup golden raisins
1 cup chopped dates
1 package (6 ounce size) chopped mixed dried fruit
1 bag (12 ounce size) chocolate chips (optional)

directions

Preheat the oven to 350 degrees F.

In a large mixing bowl, combine the eggs, butter, brown sugar, honey, vanilla, and peanut butter. Beat on medium speed with an electric mixer. Add the dry milk powder and baking soda and mix for 3 minutes.

Stir in the remaining ingredients by hand.

Drop the cookie dough by tablespoons onto ungreased baking sheets. Flatten the cookies to 3/4-inch thick using the bottom of a glass dipped in water.

Place the baking sheets in the oven and bake at 350 degrees F for 20-25 minutes or until browned. Do not overbake.

Remove the cookies from the baking sheet and let cool on wire racks.

Store the cookies in an airtight container at room temperature for up to 1 week or freeze.

    I made a third of the recipe and made bars instead of cookies. My family loves them. Try crunchy peanut butter - Yum, Yum. I have found that you can use any combination of fruits for the raisins and dried mixed fruit. Chop the dates into fine pieces.

    I love this recipe! When I don't have honey I use brown sugar and never as much as the recipe calls for. When I don't have all the fruits, I use what I have, usually raisins. Walnuts , or other nuts, are good also. Without white flour and sugar and with all the oats, eggs, PB, powdered milk, I feel this is a great breakfast (with a cup of coffee and a kiwi.) I wonder how much fiber I'm getting.

    I made these this afternoon, using almost the exact ingredients in the recipe. I did substitute one half cup of margarine plus one half cup of butter instead of all butter to cut down on the expense. Also, when I got home with my ingredients, I realized that I had not gotten diced dried fruit, so I had to chop them myself, making them larger. I would suggest that if someone is going to make them for their own use, definitely half or fourth the recipe. This make a HUGE amount!! Also, it seemed to take forever for me to bake them, since I could only put about four on a cookie sheet. They do spread a lot. Also, the recipe says not to overcook, but I found out that if they weren't fairly brown, they would fall apart. All-in-all, they taste pretty good, but I doubt if I will make them again. It took me all afternoon to get them all baked, and for the expense and effort, I don't think they are worth it.

    • Margarine has a higher water content and may have contributed to the spreading of the cookies. Also, the recipe says to drop by tablespoons which unless you were using a very small baking sheet you should have been able to put more than 4 cookies on there (so I'm guessing you made them larger which would make them need a longer baking time). It does make a lot of cookies but they freeze very well.
