A light and fluffy dessert. The pineapple and pistachio flavors are a perfect match, and the marshmallows add a touch of sweetness.

1 package (4-serving size) instant pistachio pudding mix
1 can (20 ounce size) crushed pineapple with juice
1 cup miniature marshmallows
1/2 cup chopped nuts, optional (pistachios, walnuts, pecans, etc)
1 3/4 cup nondairy whipped topping, thawed
In a bowl, combine the pudding mix, pineapple, marshmallows, and nuts. Mix well until the pudding mix has dissolved.
Gently fold in the whipped topping until mixed. Transfer the mixture to a decorative serving bowl. Cover and chill for 2 hours or up to 6 hours.
Garnish with additional chopped nuts, if desired, at serving time.
