Ingredients:
1 tube refrigerated pizza dough (or homemade)
1/3 cup Mozzarella, shredded
2 1/2 tablespoons extra-virgin olive oil
1 large Sweet onion, sliced
3 red "pimiento" peppers, cut into strips, seeds and ribs removed
2 slices Canadian bacon, diced, optional
5 slices fresh mozzarella, optional

Directions:

Preheat oven to 400 degrees. In frying pan, caramelize onion and peppers in olive oil, cooking about 15 minutes or more.

Shape prepared dough into a rectangle as thinly as you can. Place on pizza stone (we used parchment paper) or greased pizza pan and bake for 8 minutes.

Remove from oven. Sprinkle on 1/3 cup mozzarella. Top with caramelized vegetables (drained of liquid) and bacon. Lay on slices of fresh mozzarella.

Return pizza to oven and bake an additional 8 to 11 minutes, or until edges are browned and cheese is melted.
