Tomato Bacon Sandwiches

ingredients
8 slices bacon, chopped
1 1/2 cup mayonnaise
3 tablespoons Dijon mustard
30 slices homemade-style white bread, crusts removed
15 thick large tomato slices
directions
In a large heavy skillet, cook bacon over moderate heat, stirring, until crisp. Transfer to paper towels to drain and chop fine.
In a bowl, stir together bacon, mayonnaise, and mustard. Spread on one side of each bread slice, sandwich tomatoes between slices. Cut each sandwich into 4 triangles.

I have made these many times, using vegetarian bacon, for parties, pot lucks, etc. ALWAYS well received. Can easily make more or less as needed. If for a luncheon then I don't remove crusts just cut the sandwiches in half for heartier fare.
