A wonderfully gourmet breakfast without gourmet effort. An egg is baked in a ramekin on a bed of smoked salmon and topped with a dollop of rich cream. Delightful!

8 ounces diced smoked salmon
1 tablespoon chopped fresh chives
4 eggs
black pepper
1/4 cup heavy cream
Preheat the oven to 350 degrees F. Grease individual ramekins.
Divide the smoked salmon and chives evenly between the ramekins. Make a shallow well in the middle of each pile of salmon. Carefully crack an egg into each ramekin.
Sprinkle the egg with pepper then drizzle a tablespoon of cream over each egg.
Place the ramekins in a baking dish and place the baking dish in the oven. Carefully add enough water to come halfway up the sides of the ramekins.
Bake the eggs at 350 degrees F for 10-12 minutes or until the eggs have set. Remove the baking dish from the oven (carefully as the water will be very hot). Remove the ramekins from the water bath and let them cool for 2-3 minutes then serve.

The look and taste of this recipe reminded me of something you'd find on the breakfast menu at a fine hotel. The smoked salmon and egg went wonderfully together!
