Vegetarian Zucchini Carrot Chili - CDKitchen.com

ingredients

2 medium zucchini, chopped
4 medium carrots, chopped
1 medium green bell pepper, chopped
2 cloves garlic
1 can (15 ounce size) garbanzo beans
2 cans (15 ounce size) zesty chili beans
1 can (1.25 ounce size) sliced black olives
1 1/2 teaspoon cumin
1 jar (12 ounce size) medium-heat picante sauce
1 can (28 ounce size) cut-up tomatoes
cashews
shredded cheddar cheese

directions

Saute zucchini, green pepper, onion, carrots and garlic in olive oil until crisp and tender.

Combine tomatoes, picante sauce, cumin, black olives, beans, and sauteed vegetables in crock pot.

Cook on high for one hour and then reduce heat to low for 2 - 3 hours.

The cashews and cheddar cheese are added when being served.
