- #10821
under 30 minutes
ingredients
2 tablespoons yogurt
1 tablespoon mayonnaise or sour cream
1 tablespoon grated Parmesan cheese
1/2 tablespoon chopped scallion
1/2 tablespoon chopped chives
1/2 tablespoon dry sherry
1/8 teaspoon turmeric, just enough to give a slight yellow color
lemon juice if needed
directions
I will be the first to admit that the canonical and best sauce for steamed artichokes is melted butter with some lemon juice. However, this is not bad at all for a no-fat dipping sauce. It is inspired by the recipe for artichoke dip in "100 Low Fat Recipes" by Sue Spitler.
Use no-fat ingredients or even the real things.
A squirt of butter flavor does no harm.

They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
