Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.

Dressing
1/8 cup fresh lime juice
1 tablespoon honey
2 teaspoons red wine vinegar or sherry vinegar
1/2 teaspoon garlic, minced
1/8 cup olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
Salad
1 cup cucumbers, sliced, peeled and remove seeds
1 mango, pitted, peeled, and coarsely chopped
1 1/2 cup cabbage, sliced crosswise
1/2 head romaine lettuce
In a small bowl, you add the lime juice, honey, vinegar and garlic. Whisk about 3 times. Then slowly drizzle in olive oil and continue to whisk until blended. Finally, add the salt and pepper.
In a salad bowl, you want to add cucumbers, mangoes, cabbage, lettuce, and dressing. Toss salad ingredients together and serve.
For Picnicking and Tailgating: You can make the dressing ahead of time. Place in a plastic container and add to your ice chest. Put your cucumbers, mango, cabbage, and lettuce in a large storage bag and seal.
At the picnic or tailgate site, add the dressing to the cucumber mixture and toss. Take from bag and put in paper salad bowls and enjoy.

This looked good in the photo, so I made this as a side dish. I thought it could use a little red onion, so I added about 2 Tbsp. And I put on lots of pepper. Great.

I used purple cabbage and chopped it into thin strips. Then I mixed the dressing with everything but the lettuce, and then served it over the lettuce. I made it for 40 people and they loved it! Excellent recipe. Thanks!!
