It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A simple Halloween themed sandwich made with mayo, Italian salad dressing mix, bread, chicken or turkey, and lettuce. You can use other sandwich fillings if you wish, the fun is in the shape of the sandwich!

1/2 cup mayonnaise
2 teaspoons dry Italian salad dressing mix
16 slices whole wheat or white bread
8 slices American cheese
1 pound shaved deli chicken or turkey
8 lettuce leaves
In a bowl, combine the mayonnaise and salad dressing mix; spread on one side of each slice of bread.
Top half of the slices of bread with a slice of cheese, deli chicken, and a leaf of lettuce. Top with remaining bread slices.
Cut sandwiches with a 4-inch pumpkin-shaped cookie cutter.
Remove the top slice of bread from the sandwich and cut out eyes with a small triangle cutter. Use a sharp knife to cut out the mouth shape.

How cute are these sandwiches? My only complaint is that the technique for cutting out the eyes and nose are difficult with the bread already buttered. I would recommend cutting them out *before* assembling the sandwiches to save yourself some frustration. And you don't have to be a kid to love these!
