These fun and tasty Halloween appetizers are made with hard-boiled eggs, cream cheese, pimiento-stuffed olives, and ketchup or food coloring (for the bloodshot look).

6 hard-cooked eggs, cooled and peeled
6 ounces whipped cream cheese
12 green olives stuffed with pimientos
red food coloring or ketchup
Cut the eggs in half widthwise. Carefully scoop out the yolks and wipe the egg whites with a paper towel to remove any yolk.
Gently fill the egg whites with the cream cheese. Smooth the surface with a knife so it's flat.
Press one olive into the cream cheese in each egg with the pimiento facing up. Dip a toothpick into either food coloring or ketchup and draw squiggly lines to look like broken blood vessels in the cream cheese.
Serve immediately or chill until ready to serve.

Wonderfully creepy! These are very easy to make too. Allow for a little room when you fill the egg whites with the cream cheese because when you press the olives in it will displace some of the cheese. I also used only slices of olive instead of whole ones (mostly for convenience).
