Slow Cooker Sun-Dried Tomato And Onion Chicken With Balsamic Vinegar

ingredients
1 large sweet onion
1 cup dried tomatoes
1/3 cup balsamic vinegar
4 chicken breast halves, thawed if frozen
1/3 cup butter, melted
1 tablespoon herbes de provence
1/3 cup balsamic vinegar
directions
Chop the onion coarsely and place in the bottom of the slow cooker. Spread the dried tomatoes over the onion. Pour first measure of balsamic vinegar over the onions and tomatoes.
Combine melted butter with the herbes de Provence. Pour the mixture over the chicken breasts. Completely coat them, they will be sealed in the hardened butter-herb mixture.
Lay the chicken breasts on top of the onions and tomatoes. Pour remaining balsamic vinegar over everything. Cook in slow-cooker on high for three hours.

We used our "hot" slow cooker which unfortunately overcooked this in even just the short 3 hour cook time recommended. The flavor was good, our chicken was just too dry (not the fault of the recipe, we use a newer slow cooker that overcooks everything). We're giving this a 4 though because the balsamic flavor was a little sharp, seemed like it should have had some seasoning to balance it just a little (but overall it was good)
