This recipe for balsamic grilled chicken with rosemary is the perfect way to enjoy classic summer flavors. The chicken is marinated in a balsamic vinegar and olive oil mixture, then grilled to perfection.
2 tablespoons olive oil
4 teaspoons balsamic vinegar
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
1/2 teaspoon dried rosemary
1/4 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
4 boneless skinless chicken breast halves
Preheat the grill to medium heat.
Combine the olive oil, vinegar, lemon peel, lemon juice, rosemary, onion powder, salt, and black pepper in a bowl. Mix well.
Place the chicken in a single layer in a shallow, non-reactive pan. Pour the marinade over the chicken. Let stand at room temperature for 15 minutes.
Remove the chicken from the marinade. Discard the marinade. Place the chicken on the grill. Cover the grill and cook for 10-12 minutes, turning the chicken halfway through the cooking time. Cook the chicken until juices run clear when pierced with a knife.

I marinate this in the refrigerator for an hour for more flavor. The 15 minutes at room temperature just didn't quite do it for me flavor wise. Otherwise, great recipe.

It was tasty, but I sugggest more rosemary (and perhaps vinegar). I grilled the breasts on the Foreman Grill and it took about 7 minutes on high.
