Drumsticks brushed with butter and coated with crushed BBQ potato chips are tasty, but more importantly an ingenious way to eat potato chips for dinner.
2 cups crushed BBQ flavored potato chips
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon black pepper
8 chicken drumsticks, or other chicken pieces
Preheat the oven to 375 degrees F.
Place the crushed potato chips in a shallow dish.
Melt the butter in a skillet over medium heat, stirring until the butter melts. Stir in the salt and pepper then remove the pan from the heat.
Place the chicken on a piece of waxed paper. Brush the chicken with the melted butter, being sure to coat all sides.
Roll the chicken drumsticks in the crushed potato chips, pressing lightly so they adhere and form a crust.
Place the chicken drumsticks in a shallow baking dish or on a broiler pan. Drizzle the chicken with any remaining butter.
Place the chicken in the oven and bake at 375 degrees F for 50 minutes or until the chicken is cooked through.
If using chicken pieces other than drumsticks, adjust the cooking time accordingly and use a meat thermometer to test for doneness.
