1/2 cup unsweetened peanut butter
1/2 cup coconut milk
1/2 teaspoon minced garlic
1/2 teaspoon minced fresh red Thai chili
1 tablespoon nuoc mam fish sauce
2 spring onions, finely minced
Combine all the ingredients in a saucepan over medium-low heat. Cook, stirring frequently, until the sauce is heated through. Do not let it boil.
Use the peanut sauce as a dipping sauce for satay or stirred into a noodle dish.
