These delicious shoulder chops are baked with a tangy tomato sauce. The lamb was so wonderfully tender and tasty.
4 lamb shoulder chops
1 small onion, sliced
1 green bell pepper, sliced
1 tablespoon brown sugar
8 ounces tomato puree
1/2 teaspoon dry mustard
1/2 teaspoon basil
1/2 teaspoon salt
1 teaspoon horseradish sauce
2 tablespoons vinegar
Place the meat in a casserole dish. Arrange the sliced onions and green peppers on top of the chops. Mix the remaining ingredients together and pour the mixture over the meat.
Cover the casserole and cook in a 350 degrees F oven for about 1 hr.

I never much care for the taste of lamb but my husband loves it. I actually liked this recipe though since it's got the sauce on it. I omitted the vinegar though as I just thought that might be too strong and instead added more brown sugar to make it a sweeter sauce.

These were some of the most tender and flavorful lamb shoulder chops I think I've ever had! I was skeptical because I was afraid the tomato sauce would overpower the lamb, but I was glad to be wrong. Wonderful recipe!
