The warm flavors of garam masala go perfect with lamb but you can easily substitute pork chops in this recipe if you wish.

2 lemons, grated zest of
3 tablespoons freshly squeezed lemon juice
6 cloves garlic, minced
1 tablespoon garam masala
1 teaspoon kosher salt
freshly cracked black pepper to taste
1/2 cup olive oil
2 tablespoons finely chopped fresh rosemary (optional)
4 lamb loin chops
To marinate chops: In shallow baking dish or container large enough to hold all chops in single layer, combine lemon zest and juice, garlic, garam masala, salt and pepper to taste. Add oil and rosemary. Mix well.
Add lamb chops. Turn to coat. Spoon marinade over each chop. Set aside at room temperature for at least 20 minutes, turning and basting occasionally. (Note: May cover and refrigerate up to 12 hours.)
To broil chops: Adjust broiler rack so it is 5 inches from source of heat. Line broiler pan with foil. Preheat broiler. Transfer chops to broiler pan, discarding marinade.
Broil, turning as necessary, until cooked to the desired degree of doneness (about 5 minutes per side for medium-rare). Transfer to cutting board. Let rest for 5 minutes prior to serving.
You can also cook these in a grill pan.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is a fantastic recipe! Lamb can sometimes be a little gamey so the lemon marinade will take care of that. Just a note though, I wouldn't marinate for longer than the 20 minutes because it is a lot of lemon and it could start to "cook" the meat and you'll lose texture that way.

Very nice - I might use less lemon juice next time, but overall a very nice flavor.
