Morning Wake-Up Jalapeno Omelet

ingredients
1 firm jalapeno pepper, minced (more if desired)
1/3 cup finely diced green bell peppers
1/3 cup finely diced red bell peppers
1/3 cup finely diced onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon hot sauce
2 tablespoons chopped fresh parsley, cilantro or basil
2 tablespoons margarine or butter
1 slice cheese, your favorite (more if desired)
5 eggs
directions
Add margarine or butter to a skillet or omelet pan. Add minced jalapenos, diced green and red peppers, and onions to margarine and saute until onions are glassy looking. Season with salt, pepper, hot sauce and herbs.
Beat eggs with water and slowly pour throughout sauteed mixture so that mixture will remain spread evenly throughout the pan. Simmer covered over low heat until eggs are set.
Add cheese if you want to melt it slightly. Add minced parsley or paprika to add color and garnish touches.
